The Law
In 2006 there will be a legal requirement for all food
businesses to have a food safety management system based
on HACCP principles. HACCP is a complicated and often
confusing name for what is actually a very logical system
of food safety management.
HACCP is looking for potential situations in your food
business which could develop into food safety hazards
and putting in controls to prevent them.
The system traditionally follows a 12-step set of guidelines.
